Specifically what you need is a signed document by her (and one by you) saying she is willing and able to marry (see Guides/Example Immigration Forms here). 
That will be accepted as proof of engagement.  You will need to prove the relationship is bona fide at the visa interview.
If you have not met each other in person in the last 2 years that can cause problems or delays.
