Just a quick question. As I am putting all the documents in order I realized that the G-325 Form that was completed and emailed to me by my fiancé is not signed. Do I need to get her to sign it and send it to me via mail, scan and email or have a read someplace where the G-325 for my fiancé can be left blank and she can sign it at the interview?
Curious and now nervous and could sure use the help!!

I believe they need to be translated to English and Notarized. You don't need to include the birth certificate with the petition, but she needs it at the interview in Colombia. The divorce paper, yes, it needs to be included in the petition so it has be sent to you to include with the rest of the documents. Translated notarized copy will do.

I have a question. My fiancé is from Colombia and we are just starting the process and gathering our papers. Her divorce papers will need to be translated. Can I have them translated here in the US or will they need to be translated and certified in Colombia?
Also will it be necessary to have the Birth Certificates translated?

no, plus that is not the correct affidavit of support,
the affidavit of support for fiancé visa is the i134 and is submitted with taxes and supporting financial evidence at the interview stage
the i864 is for adjustment of status once you marry in the US and send the adjustment of status packet for the green card

I have been told that I will need to submit the I-864 Document with my I-129F but as I look on this site I do not see where this is required. Will I not need it?

Yes you can use your PO box for questions asking about mailing. If it asks for a Physical address or the address of where you and your fiance/e intend to live, then you need to list your physical address.

I am starting the K1 Process and have started with the I129F Form. On section 2 Your Mailing Address . In (2.b.) it asked for the street number and name. I do not receive mail at my home but at a PO Box. Can I use the PO box in this section?

I have place all of my required documents in a 3 ring binder and each group is separated by tabs. The paperwork is inside of plastic page protectors.
My question is this: Should I use the plastic page protectors or no?
May sound silly but I really want this to be a smooth process and only want to do what is best for the reviewer.
Any thoughts?
