How about working two steady jobs to meet the minimum requirement? Is that fine? What if it's an on-call job like where you work 3 times a week with one job and 3 times a week the other?

I'm a professional actor and freelance ESL Teacher (with a lot of other side jobs) looking to marry my fiance who I proposed to on our vacation in Peru. We decided it's best if he comes to the US in February 2017 so we can get married.
My problem however is that my jobs aren't steady. I earn about $1,500 each month (I'm 24 years old) and my income varies from month to month (which I know doesn't look good in the eyes of the people in charge of processing the visa for my fiance. He has a steady job but I know that doesn't matter in this case. My question: How long do I have to hold a steady job for and does anyone have any tips for me? What are the job requirements for the US citzen? I don't want to give up what I do because even though my income varies,I'm doing well. But if I have to do that for a year or two so I have a steady job, so be it. I have some steady job options I can take.
My fiance is Peruvian, lives in Austria and we've been in a long distance relationship for over 2 years now. We want to be together and support each other. He has been extremely patient with me and I'm very lucky to have someone so supportive in my life...

If I was working two jobs: for example teaching 3 times a week at $20/hour for 8 hours each day and working at a restaurant 3 times a week $25/hour for 8 hours each day, would that count as steady income for a K-1 Visa?
