You can, of course, go for a K1, but if you do, DO NOT have any kind of ceremony that would even possibly look like a wedding to anyone. Ever. Not even an engagement ceremony. Nothing. Or you'll probably get rejected, have to get married, apply for the spousal visa etc etc etc.
Ah, just so that OP won't have a wrong impression, we already have K-1 in hand and we'll be having an unofficial ceremony right before coming over to the US side. I didn't realize OP was asking before getting K-1.

Thanks! I think you are right with the C/O address, that is what I'm going to do.
I've prepared two separate letters of intention. Did you type and print your letters of intention and then hand-sign them? Or were they handwritten?
I haven't hand-written anything in ages, I probably forgot how to write, lol
I printed and then signed, and nobody complained.
As for filing abroad, yeah, no issue. The problem is that people tend to move around while they are abroad and using your "permanent" address tends to be safer. It's probably less likely too for someone to make mistake when the address language/format looks familiar.

About entering with tourist visa or visa waiver and then getting married, do google and you'll find plenty of info on it. As for the marriage ceremony at home before coming over on K-1, that shouldn't be an issue. In fact, we are planning just that. We'll be having a ceremony at a buddhist temple, with bride's parents and all, and then come home to the States and then get the marriage license/certificate taken care of at the City Hall.

Yeah, I think Class B should be fine. My fiancee had a treatment for a psychosis and disclosed it during the medical. The only quesiton asked during the interview: where and when did you meet?

I think there was a similar query not long ago about what address to use.
1 & 2 - You can use your US home address as a c/o address. I used my sister's and had her take pics of all letters and text/email to me. This is actually safer and faster than using your foreign address. (Electrons travel faster than papers!)
3 - You can use an approximate address. I used my last address in the US as the address we'll be living in, despite I no longer rent/own that place. You probably can use your mother's address too.
4 - We only included the photos and airline tickets as evidences and had no problem. But, the more the merrier, I suppose.
5 - I think you both need to include separate letters of intention. This could be important. If anything is missing in your submission, you may get an rfe.

Use your parent's or whoever willing as your c/o address. I am overseas and I used my sister's address in the States. She then took the the pics of all letters from uscis and others and sent them to me.

12/28 - NOA1 received
1/25 - NOA2 received
2/4 - File arrived at NVC
2/18 - Packet 3 received
3/24 - Interview & approval
My fiancee has been treated for psychotic episodes. We disclosed it during the medical, but did not check it on DS-160 since she no longer has the condition. The interviewer did not bring it up and we are now all done!
Anyway, thanks to the resources on this site. Postings on mental disorder was of much help. We'll hang around for a while and see if we can be of any help to others.

We met through craigslist 3 years ago and we simply mentioned that as how we met. We flew through K-1 process in just 2 mo and now scheduled for interview. No prob so far.
Use of county clinic -- ground for AOS rejection?

Hi all,
My wife moved to the US on K-1, we got married and we are in the process of filing for AOS. She has an ongoing medical condition and taking drugs. We are still waiting for our obamacare insurance to kick in. Meanwhile she ran out of the drug. The county clinic provides free counseling and cheap prescription, like $40 for the whole year. We are wondering if that would constitute the use of welfare and therefore a ground for rejection of our AOS application. Any thoughts on this?
