Here's the reply from the Consulate (if anyone would be interested):
"Thank you for your email. This is indeed a real study we are conducting. We do not request any other personal information from you other than if you are married to the person you petitioned for. We’re happy to answer other questions you may have." -
This morning I found an email in my inbox from the U.S. Consulate in Amsterdam, reading:
"The United States Consulate in Amsterdam is conducting a study regarding K-1 Visas. Our records indicate you received a K-1 Visa. Please reply to this email message as soon as possible answering the following question: Are you currently married?"
The email was sent by a Megan L. Horney. It all looked legit (email address was @state.gov). Did any other (former) K-1 visa holders from the Netherlands receive this email?

Thank you all for your responses and opinions. I think I will go ahead and get our package ready as much as possible. If we close in time, I will add that evidence to the package (and use our new address of course). If the closing gets delayed I will send the package from our current address without that paperwork.

Hi everyone,
I have a dilemma about the moment to file for my I-751. My green card anniversary is on 8/29/2016, so I the earliest moment I can file is the beginning of June. I know it is recommended to file as soon as possible. But we are now in the process of buying our first home, and our closing date is in July. Until now we have lived in with my wife's parents, so we don't have very many bills or contracts that we can use as evidence of our relationship. We have a joint bank account, 2 cars (and insurances) on both of our our names, health insurance policy, 401K's with each others name, evidence of joined dentist appointments, joined flight tickets, pictures, and can get affidavits if needed.
Would you advice to file as soon as my time window opens up, or wait until our house papers are signed so we have a much stronger package of evidence? Or can I add our current house paperwork (signed by both of us) as part of our current evidence package.

To close this topic off, the closing process followed the original timeline and we closed on July 1st. I waited a few weeks until we had our first set of bills and contracts in our new names, had changed the address on our DL, and sent our address change notices to the USCIS (for me as the Green card holder, for her as my sponsor). Last week I sent in my ROC package, and yesterday I received my NOA1. All well before my Green card expired.
