I think the best way to find out anything at this stage is to contact the embassy directly at the link posted above. We tried calling and skyping the Embassy with no luck, but they responded pretty quickly to my fiance's emails.

The embassy in UAE will schedule the interview, it took them about 10 days to let us know after we received the letter from NVC.
The embassy will contact the petitioner via email with the appointment letter and a list of what you need to bring. It will kinda look like spam because there will be no subject line - ours came from the sender Abu Dhabi, IV and there was no message, just two attached documents for the letter and list of physicians. I'm not sure about the payment situation since the letter instructs you to pay at the time of the interview - my best guess is to bring your receipt as proof of payment but other users may know better.

We had actually wondered about the exact same thing last month and ended up asking another member here who had just gone through the interview stage. They were super helpful. Best of luck!

My guy and I just did the manual print-screen into document, mainly for the Skype call log, and then redacted any of the sparse text that was for our eyes only. Think it was about 8 pages. We did the same with our other logs like GoToMeeting, Google Talk, etc.

You should be able to get your SS about 2 weeks after entering the US. Possibly sooner, but your record may not be updated across the board yet.
The staff at our local SS office was ready to deny my fiance based on the same reasons, wanted him to have work auth already. But I gave them the entire printout off their own site (same link as above https://secure.ssa.gov/apps10/poms.nsf/lnx/0110211530) with the K-1 line highlighted, which prompted them to research it further. They checked with another official online and then somewhat hesitantly followed through. 7 days later we received his card in the mail.
We've found lots of officials out here near Chicago have no flipping clue about K-1 procedures. It sucks, but I guess sometimes you have to very politely educate officials who are unfamiliar with it along the way =(
