I agree, enter the start dates and set the end dates to match so there no gaps. Whenever asked in person, or given the opportunity otherwise in writing, explain the situation.

Include your tax returns. Also get three years of returns from your joint sponsor as well. The joint sponsor's returns are more important, so long as they exceed the minimum income needed.
