so today is my birthday! and for my birthday i asked my fiance for the love of god to mail the completed packet 3 to the embassy

I dont think I am the right person to ask your question because I am filing for a K1 but generally when you meet all the requirments set forth by the embassy you should expect an interview to be 6 weeks to 8 weeks out.
