Income Tax Return Info.

I have a quick question, do they only ask for your most recent tax return or do they ask for the past 3 years? If they do ask for the past 3 years, what happens if the 2nd & 3rd year shows negative income due to being self employed and the schedule C deductions and then your most recent tax return is well above the poverty line.
