What if I am currently making enough income, but haven't for the entire last 3 years?

I started a job last year, from which my salary is well over the required amount. But, only one year's tax documents will show that. Is it really necessary to show the last 3 years documents? Or is it enough to have been making a good salary for a year and a half?

From the UK consulate, that should be good enough. Just get a copy of your tax transcripts (you can request this for free from the IRS) and have some pay stubs. If you like, you can ask your employer to write a letter stating your job title and your salary each year. I only made $25k in 2008 due to starting my job at the second half of the year when we applied for K1. You can also list assets if you like, but if you make well over the poverty line, you don't need to.
