Review by my fiancé:

I'm a Portuguese citizen and had my interview at the Paris embassy on the 20th of October 2021.

Before the interview I bought a Chronopost 29x38cm (the 25x36cm size no longer exists I believe) envelope from La Poste for €59. You can fill it out if you wish but I recommend you don't as they will do that for you. You can remove the foam protection inside if you wish but you can also do it at the embassy when they ask you to.

To enter the embassy I had to wait in the sidewalk opposite of a double wide tent which is the first security post. They called out for people to enter every 15 minutes. They were friendly and reasonable. At this first security outpost I was asked to present my passport and they checked their list. We (fiancé and I) were able to enter together for the process after the security guard asked someone in the building if it was possible.
Once past the security (which you have to leave your phone/electronics behind), there's a small desk where we got some of our documents ready and a ticket that was attached for the procedure. Then we went for the line to give our documents and the Chronopost Envelope. The lady that attended us, deals with the Portuguese people (she speaks portuguese) and she was extremely nice and helpful. Once the documents and fingerprints were given, we awaited for our turn with the interviewer.
The interviewer (also speaks portuguese) did our oaths and asked simple questions about our relationship:
- How did you two met?
- Do you work? What is your job? Where do you work?
- Where do you live?
He also asked for some photos and we showed a page with some photos we took together recently.

They were friendly enough but stated we did not have the Intent letter when we did give it to them so we had to send them an updated on with the words 'free and willing to marry'. THen they misplaced the passport photos given to them on interview day so we had to mail a new set from Portugal. All of this caused a delay of 2 weeks and 2 days to receive visa we flew back to Paris to pickup.

Let me share my experience of the K1-Visa at the France US Embassy. I did my interview today, May 5th 2021.

I am Portuguese, so I will comment on my experience and what was the necessary documents for a Portuguese Citizen. If you are not Portuguese the required documents or what they check could be different.

Embassy sends an email 3 weeks before the appointment.
You should book your medical appointment 15 days before your interview. The embassy says that you will get an envelope with the medicals but that information is outdated. After your medical they send the results by email to the embassy (If you do the medical in Lisbon). You don't receive anything. The medical exam is: Blood analysis, eye exam, chest x-ray, check your vaccines and do a general touch on your whole body to see if you have any lumps.

Waited about 2h for the whole thing, at the entrance they verified my DS-260, passport and Chronopost envelope.
Security was a bit intimidating, and I wasn't allowed to take my phone in -- security held it before I could enter. Everything else in my pockets (wallet, cash, etc.) was fine to enter with me. Upon arriving I waited in line and had to give the receptionist my passport, DS-260 confirmation, birth certificate, police certificate, and Chronopost envelope with my address written on it. All of the workers were friendly.

Afterwards I was told to wait until my name was called for the actual interview. When it was my turn, I was asked the following:
1. Favorite photo of us
2. When we got married
3. When we met
4. If I lived anywhere other than Portugal
5. How we met
6. Asked to see recent photos (and asked for me to point out my wife in a group photo)
7. If he has any children
