We had a similar experience to Alanaloria. Overall the process is pretty simple, and it didn't take long to get ready for the interview (medical, police record, etc).
It is slightly annoying that we had to drive to Belmopan to pick up the packet before the interview. But if you really can't make the trip, Ms. Tillet said it is possible for them to mail it (they just don't like to). The medical stuff took a couple of hours in Belize City. The police record you can get processed in one day at the Belmopan Police station (take your passport and 3 passport photos).
Our original interview date was only one month from the time the embassy got our case. But we had to reschedule due to my fiance's work. A phone call to Ms. Tillet is all it takes to reschedule. They only do immigrant (and K1) interviews on Tuesdays at 9:30am. If you want to speak to Ms. Tillet, it is best to call on a Tuesday. Email also works pretty well if no one answers the phone.

Things were a little different than what we were expecting from reading reviews about the K1 process in other countries, and there's not a lot of information out there on Belize, so I'll give the best summary I can 
First of all, my fiance had to go to the US embassy in Belmopan to pick up his instruction/interview packet (it was all part of that same package). At that time, they told him to fill out all the forms and get the medical exam, and bring them back for his interview which they scheduled for about a month later. He had to get the medical exam in Belize City (visiting 3 different doctors for the blood tests, chest x-ray, etc) and it was about $150 US including the taxi. He also had to go to Belize city to get the new version of his birth certificate, so I recommend doing that at the same time if you live far away. Once everything was shipped to the Consulate it was a little different than what we were expecting. 1 - My fiancee had to go to the consulate to pick her package up, It was NOT mailed to her. 2 - When she picked up her package at the consulate they immediately scheduled her interview (2 weeks from when she picked up the package). 3 - Had to reschedule the interview twice due to the fact her passport wasn't ready yet (our fault! We should've renewed it once we started the process. 4 - For the interview they asked about a dozen questions...basic stuff you would expect (e.g. how long have you know each other? When was the last time he visited?). 5 - VISA APPROVED!
