    No, it is not adequate and value is not the issue.  The issue is equity, so you must disclose and document the mortgage balance.  The instructions are there for a reason.  Don't ignore the instructions that say that the assets that count must be liquid, and that a primary residence is NOT considered "liquid".
     
    Literal interpretation is the key.   Don't engage in "convenient interpretation" in THIS process.  You were well advised already what to do to solve the problem.

    If the visa is valid (which it is in your case) and the China is not closed to international visitors, then the visa you have can be used.

    For an answer to your question in bold and red, see Crazy Cat's answer.  To answer your question in bold and green; no, having a lawyer makes no difference in the ultimate outcome of the case.
     
     
    Unless you need it for something outside of the immigration process, don't bother obtaining an apostille, it is not required at any point in this particular process.

    OP, you said the first case was revoked.  Did you receive a Notice of Intent to Revoke (NOIR) and if so, did you respond to said notice that would've spelled out the issues that would've needed to be addressed?
     
    If you didn't respond to the NOIR and the case was subsequently revoked, then all the issues that would've been spelled out became part of the official record that don't go away by filling a new petition.

    I'll be contrary here.  I say skip the affidavits altogether.  Actually that is the most common advice here on VJ regarding affidavits.  At best they are useless, but more likely to simply make you look desperate. You are seeing this as one of many options listed after these words, "In addition to the required...." (so not required)  and "one or more of...."
     
    Newlyweds are wise to concentrate on actual evidence of time spent together in person, and examples of how and how frequently you communicate.

    IMO, sending anything unsocllicted to USCIS at this juncture is likely to be nothing more than an exercise in futility as the chances that it will end up with the file are low.  Furthermore, if you included all your other evidence, chat logs will not make or break your case.
