are you sure your country allows joint sponsors at the fiancé level? some countries don't allow a joint sponsor. regardless, all the affidavits and supporting financial evidence is sent to your fiancé and she will take it to the interview. she will hand It to the consul when requested.

nope, once you paid for the i864,  both forms, the petitioner's and the joint sponsor's affidavits, are uploaded on the nvc website
 
the petitioner received the steps on how to upload and pay the forms and documents, 
 
so the affidavits as well as the supporting financial documents are uploaded at the ceac page, and then the originals presented at the interview. the complete file from the nvc is sent to the Embassy, the Embassy doesn't receive any loose documents
