NOA Date = The Receipt Date on your original NOA letter
Biometrics = The Date of your biometrics appointment

FYI, Roth IRA is not tax-deductible. If you leave money for at least 5 years & you are 59 1/2 years old, when you withdraw this retirement fund then it is tax-free money of course if you have made a profit.
Only traditional IRA is tax deductible.

How about some Joint Bank Account Statements ? Lease or Mortgage Documents (Prove that you have been living together) ?

You do not need your EAD anymore. EAD is used to be able work while you are waiting for AOS approval meaning your GC which covers work & travel abroad.
