Okay, so I've done some more research on this. It sounds like it could be an issue if there is any doubt that he might have come here with the intention to stay. I was thinking about it, and I think we should be able to present enough evidence to show there's just no way that was his intention:
He came with only a backpack, as he always does, for a two week trip. He left everything: money, clothes, very important keepsakes - photos of his father who passed away, etc., his favorite pair of glasses. Literally everything behind in Mexico City. I will have to take a trip back to collect all of his stuff if he can't leave after we apply to adjust status. He has plenty of correspondence with his work and his jiu jitsu class about coming back in two weeks. He would have received a severance package (and while the peso was still good) if he had quit his job. After he arrived, we still were taking steps to complete the K-1 process. I called and got the case number and we went through and completed the DS 160 together. I really think we have enough to show that there's just no way he came here intending to stay. If anyone has any reasons why it would be a bad idea to do this, I want to hear all sides.
@designguy @Paul & Mary @Mike E @little immigrant Thanks for the responses! I just want to make absolutely sure it's the right decision. I already started looking at dresses I could order online! We were already planning to do a quick legal ceremony anyway as soon as the K-1 went through and then a big reception later with family and friends.
Also, I'm so sorry for everyone who is not with their loved one through this madness. I hope this isn't an insensitive topic. I know we are incredibly fortunate about the timing and I really hope things get under control soon or measures are taken to find a way to keep moving the immigration process during this.

Intent is determined at the POE. Entering with just a backpack it a good thing.
Plan on you going to get his stuff in Mexico. He wont be able to leave for 4 to 6 months after filing AOS/AP/EAD.

You can adjust if you think it’s the best fit for you now. Keep in mind that he won’t be able to work or leave until he has the AP/EAD Card. With the current situation who knows how long that will be. Could be a good year or more potentially so just keep that in mind

Case received today, 03/09/2020 by NVC and case number assigned. Called 603-334-0888 around 11:30 MST and was on hold for about 30 minutes. Although the initial message when I called said that I would need the passport number, the operator only asked for my receipt number, my name and date of birth (I am the petitioner).
NOA2: 02/20/2020 (18 days from NOA2 to NVC receive)

There is nothing you can do. You nor anyone else can move the process along. Others will be passing you by at different stages of this process and you will be passing others by in their stage. So don't compare yourself to others. Everyone is different, with different backgrounds, different cultures, different countries etc. So you can't really compare yourself against them for any kind of accurate answer as to "why".
This is a simple process and you can make it difficult or you can have an easy go of it. Not long ago I posted an article written by a adjudicator at USCIS who worked on cases like yours. I think you would find it to be a good read.

When I reply sometimes there are items in the reply that pertain to you and other times it's there to be informative for others as well as you. At times you need to separate the wheat from the chaff to determine what is important to your situation and not down play the response. This is a learning website so the learning goes beyond the personal response to others who have yet to experience what you are experiencing. Since you have this under control, I'll leave my replies for others. I hope things move along and you get your approval.

We already received our RFE We know what it is but as we needed to wait for documents from Switzerland, which we had to then get translated.
Luckily USCIS gave us 90 days to respond. We're at the one month mark now. I am expecting a response once we send it away more than 2 weeks however as it is a court document, rather than a simple box not ticked.
The Swiss have lived up to their reputation of being efficient thankfully!! Thank you ❤️
