Quick update -
Talked to a lawyer, and we may actually create a trust and while we're at it, they'll do a corrective deed to put my wife's full legal name on it. Process will take a couple of months, and we'll be ready to file in May (give or take).
I did not know about the 90 day early filing rule until this week, and in theory, we could file today... but I'm/we're not ready yet.

Think they have to give 1 month notice before actual interview, so could apply 2-3 weeks before going on vacation.

We could do that... our field office will be Washington or maybe Baltimore. Both are at 5.5-7 months overall. Maybe tack on an extra month or two, if we apply in May that gets us to February with a month or so to get the passport before our next trip overseas. We can wait to book that until we get the oath ceremony scheduled.

Welp, I think you have bigger problems than listing other names used on N-400. There's no harm in disclosing it on form. However, from life perspective, if her name is incorrect on deed, she may not be able to manage ownership of this property if you're no longer around etc.

I made the same mistake on the petition by listing what I thought was my city of birth when my birth certificate actually showed a different (but adjacent) city.
I let it slide and nobody said anything.

My wife (the IR1 visa holder), our kid, and I went to the CBP together at our POE. I let my wife answer the questions while I just handed over our passports.
It was a breeze compared to the CO interview (which was also easy). The CBP just asked about our address and said to call if the GC doesn’t come within 90 days.

GC delivered today July 22 - 52 days after POE
I wasn't in town to pick up the mail, but my mom did and confirmed with me.

You will get your GC in 5-7 days.

Whole thing is absurd.
I’ll scan their boilerplate letter for my records, slap a note on it saying there’s no online option so I’m resending it as per form instructions, which were explicit.

Resend it. There is no online option. I have sent 2 I-865s within the last year. I received a written confirmation about a week each time.

Anyhow, I’ll keep the returned mail as evidence (safely under lock & key) that I DID file in case someone starts asking questions.

I filed a change of address by printing and filling out a I-865 form and mailing it by certified mail a month ago.
I followed these instructions: https://www.uscis.gov/i-865 - and sent it to the correct service center.
Today I get mail from USCIS and it turns out they sent it back with a boilerplate letter basically saying "the information you seek is available online blah blah" and that "the Vermont service center will continue to accept paper correspondence for [a limited set of forms of which I-865 is not included]"
But there's no way to file the i-865 online. The instructions specifically say to print it and mail it to the service center corresponding to your location.
On the other hand, it shows the right address on the letterhead, and there was no forwarding label on the envelope. So it seems they know my new address.
What gives? USCIS can be so irritating.

GC: still waiting, can take up to 90-120 days

And that’s what we did, the new address was already in the officer’s system, which gave us peace of mind. The CBP was also nice, she processed us together as a family. Whole thing took just a few minutes.

We had no problems with the school or the doctors taking our yellow vaccine books and put it into their records.

With Kaiser it appeared that updating and computerizing any and all vaccination records was a front and center number one priority action item for new enrollees. They proactively did the same with both my stepdaughter and wife at their first visits for any reason. Now all the vaccinations are entered in the State of California database and we can just download a fancy pdf with the official state seal and all, which is quite convenient.
