You don't file I-130 if you're K1. You're probably thinking about I-131, which is Advance Parole.
Just one fee for the I-485. 131 and 765 are free when filing along with AOS.
The best thing you can is research. There's a lot of guides here with all the forms and evidences you need.
Like already said before. I doubt she's gonna have her combo card before April, and she can't travel outside the US without it.

You don't file I-130 if you're K1. You're probably thinking about I-131, which is Advance Parole.

So she needs to get them and then find a doctor that will transcribe them to a I-693. If you can't find one, you're gonna have to do another full medical.

Be careful with lawyers too. They tend to make more mistakes than USCIS. You can refile. Do it asap. The only reason you couldn't refile is if they revoked your underlying petition (I-129f, which didn't happen. You don't have too much time. So start filling out all the forms. How old were the employment letter and paystubs? Forget about your k1 package. You need to provide current proof for the AOS. So basically you need an employment letter and paystubs from right before sending the package. If you sent "old" information, how do they know if you're still working there?
I sent my package in September, the employment letter was from August, and paystubs were from June to August.

Forget about the K1 interview. If you didn't send the tax return Transcript, that's why you got an RFE.

Just to clarify. The interview you mentioned is the k1 interview or the AOS? The way you wrote it made me think that the k1 interview was 5 months prior to the AOS interview. This way she wouldn't be eligible.
If it's the AOS interview, and it's been more than 2 years, you're fine.

AOS is for the foreign spouse, not USC. USC doesn't file anything.
The moment you guys got married, you can start using your new names. As an USC, she can start changing her name on driver's license, SSN. But that doesn't affect the AOS process at all.
