For people that have not received a reply this might help.
I sent in the application on 04/03/2019 (Chicago lockbox) and they received it on 04/05/2019. However, I heard nothing until 04/25/2019 when the check was cashed (no texts/emails/NOAs). I spoke with USCIS today and the lady informed me that the NOAs were mailed out on 04/24/2019 and also gave me the receipt numbers so that I could track the application. She did say that 20 between receiving the application and mailing NOAs is not uncommon.

Do what I did.....I called them to confirm if any mail was en route to my address they had on file. Then I explained that I'd be moving, had already filled out the form (AR-11) and was gonna mail it in.
The clerk advised that nothing was mailed out recently but go ahead and send them the change of address form and they will send all new correspondence to the new address.
After mailing the form, I called them a week later to confirm that the address was changed and it was!

We didn't put a priority date (since K1 doesn't have one by definition) on the I-485 either but signed everything and didnt have problems.
I agree with Shiran. They probably couldn't give you a date because of the missing signature.

In Part 2, Question 4 we put "Received date" from NOA1, form I-797C. You can do this too, but this is NOT what they are telling you.
What they are telling you I believe that since I-485 was not signed, THEY (USCIS) could not establish "priority date" for I-485. They will create one once you return it to them properly signed and money clears from your cheque.
Assuming you are submitting I-131 and I-765 as well, you should have 3 signatures by the petitioner and one signature by sponsor on I-864 (or possibly more if you have co-sponsors)

Hi, no need to worry. I've filed 2 months outside my I-94 expiry date. I was regarded as 'out of status'. it's no issue to file after the 90 days. The 90 days is just for marriage.

You should be okay, your marriage certificate is all the proof they need that you got married within 90 days (which is the actual requirement, not that you need to file within 90 days).

The woman at the post office was familiar with filing stuff for USCIS and she gave me a great tip: send it by certified mail and use the online tracking tool, then when it arrives, take a screenshot showing when it arrived and who signed for it, print it, and put it with the spare copy of the AOS package. She said that helped her recover a "lost" package at USCIS!

Her interview was today and.... WE'RE APPROVED!!!!! She had to wait a little longer than I expected so I was bouncing off the walls with anxiety but it's done! She's coming home to me.

And this is why k visa is a visa from hell. Beneficiary totally dependent on petitioner who may do exactly what you’re doing.
If you won’t sign I-864 she won’t be a legal documented resident. Either let her know you’re destroying her future and pay for her ticket home or get married, file AOS and sign the damn I-864 form!
