Write a letter and fax it or email it to the embassy then send it snail-mail.
You can do the same to notify the USCIS but since they're already done with your case since it's in the embassy, not sure if you need to do this.
Letter can go:
US Embassy in XXXX
I hereby notify you that I no longer want to proceed with the processing of K-1 petition - case number XXX000000, beneficiary name XX, DOB XXX, address XXXX.

You may need to state a reason, being the beneficiary and keep in mind that withdrawing may potentially affect future K-1 visa applications, if you end up making one (It may generate red flags requesting a reason for the cancellation)

As mentioned in the title, I have had my interview at long last and was told that my visa has officially been APPROVED!
Timeline on the day:
8.30am - Arrived in Auckland City a bit early due to traffic being lighter than expected (yay for school holidays?) So I parked my car in the Downtown parking and took my time walking, stopped to get some breakfast.
9.15am - Arrived at consulate. Was told I was still too early, but was welcome to wait around. Was let in at 9.25 after booking my phone and keys into a locker.
9.30am - Went up to Window 5 as instructed and was greeted by Elle (whom I had talked to previously in e-mail communications) - fingerprints were taken and I was told to pay my fee at the next window ($397.50)
Approx 10am - was called to Window 2, the interviewer was very polite and friendly, asked the standard questions about how my fiancee and I met, how long we had been an item, what kind of work I planned to do in the USA, when we planned to get married.
Whole interview took about 5 minutes, then I was told I was approved! Was also told that my passport and package would take around a week to arrive as this weekend is a public holiday here.

Just got an email from the US consulate. My interview has been scheduled for Thursday January 26th! So in 9 days I will know what the final outcome is!

Unfortunately if you haven't already downloaded or received a paper copy of it in advance, unless you can find it from another online repository (like archive.org), you may just have to bite the proverbial bullet and use the more recent form.

I-797 Notice of Action is used to either inform you of Approval, Denial or Request for Evidence. So for better or worse, you will soon know. Best of luck!

Yes, there is a new I-134 that is coming into effect, but the old one is still able to be used as long as it is received and processed BEFORE the 27th of this month. After that date you need to use the most recent (and much longer) form.
From the USCIS site (https://www.uscis.gov/i-134 ) :
Latest edition: 11/30/16. Starting 02/27/17, USCIS will only accept the 11/30/16 edition. Until then, you can use the 02/19/14 edition and other previous editions. You can find the edition date at the bottom of the page on the Form and Instructions.

I've been through pretty much all the pre-requisite stages (Medical examination, sending in paperwork to request police clearance, sending in my affadavit of support and other paperwork) and have sent in the form requesting an interview to be scheduled. It said on my letter that it typically takes 2-3 business days in New Zealand to process, but said nothing about how long it should take to receive an actual interview date. (travel.state.gov says there is virtually no waiting list, reporting 1 business day for Auckland, but also says not to rely on that for K visas)
Any fellow kiwis here that can give a little insight as to how long the wait will be, whether I would get it next week, or a few weeks down the track? (The lady at the immigration visa department of the consulate office said over the phone that my interview SHOULD be before the end of the month, but I'm taking that with a grain of salt)

Congratulations. I have my interview coming up, though I am yet to actually receive my letter saying when the interview IS. Paperwork I will need to take is going to be a little different since mine is in New Zealand and the consulate receives my police clearance and medical examination results directly rather than my having to take them there (As far as I am aware I will not receive a copy of them.)
