I hate to say this, I went with my fiance to Saigon for a vacation while waiting for the K1 interview.   She is from China, I am from LA USA.  We both have stamps in our passports which we mentioned and which CO looked during the interview in Guangzhou China.
 
So missing the stamp on the passport could be the accident and not the norm.

Bring him go eat chilli crab in Singapore or Or Lua or Fied Kuay Diao.    Now, if he is telling you no taxes, its a red flag, I suggest you ask him log in to Social Security administration website and pull out his history and show it to you.   IRS can provide tax transcripts too on the website ... pdf download.    Please verify what he told you, its for your good down the road so as to fix problems early.

Prepare what the RFE indicated.  I think you can include new photos with dates etc if you have it.  RFE is for 8/17 - 8/19.   make it in easy to read and understand format like a table, list dates places, appendix evidence etc.

Please DO SEND CERTIFIED COPIES, those with a court ink stamp and if available court clerk signature.   I went to the court house got 3 copies of everything.  Even NO record search I had them print out, stamp and sign for me.  Went to police station got 3 copies of no arrest certification.. inked and signed.   Used 1 set for petition, brought 1 set to interview, and 1 set standby maybe for AOS.

We received the K1 visa in passport today. 12/2/19
 
AP appeared before interview = meaning doing some work on it.
AP appeared after intervewi = still doing some more work on it.

Transferred to NI department to issue.  Next status change is ISSUED.
We are at issued stage now, interview 11/21/19

Go visit, get a passport stamp and visa, air tickets, any other tickets with names, hotel receipts, pictures, 
you need to meet legal requirements (meet 1 x per 2 yr prior) and have proof.

K1- Approved... now awaiting visa and passport pick-up

Interview was shaky until she pulled out my USA passport to show I am outside waiting and then it went very smooth after.

Just completed medical at GUANGZHOU.   Report ready next wednesday, 11/20 ..interview Thursday 11/21. while chatting with people in the waiting room, realized some were so ill prepared, some never heard of VJ, some waited 14 years F4 visas.

Its a $400 gamble... I will just redo the I-693  easier to earn that $400 than go thru Months of priceless agony.

You will be asked about ongoing relationship.   So prepare evidence of that.   A visit would be ideal.  Present during interview outside embassy (with passport as proof) perfect!
