Copies of 1040s don't hold much water as there is no proof you even filed them. Tax transcipts come from IRS showing you filed and a brief breakdown of your income for that year.
I imagine it won't be to long before IRS will require tax transcripts from everyone. 1040s are to easily faked.

I adopted my wifes 7 year old daughter [K3/K4] AFTER they arrived in the US. Almost impossible to do so in the Philippines.
It was a very easy process and only took a couple months. I applied for her US passport right after she got her GC. After my anak got her GC she automatically got her US citizenship 2 years after our date of marriage in the Philippines. Passport agency held the application until the 2 years were up and then sent it.
Moms still has to wait 3 years from date on GC to apply.

There's good reason why vaccinations are required for immigrants from countries that may have not given all the necessary vaccinations to live in the US.
Only religion I know of was Science Christians that refused vaccinations.

You are splitting hairs over nothing. No way will a person have problems if you have things notarized but may if you don't. As I said: AFTER a RFE I was requested by a USCIS officer to have my letter of cancellation notarized. I really don't give a flying fock if you do our don't listen to me. I would be WELL prepared for your interview if it's for ROC. Most people aren't required to have interviews if they send in enough evidence they have a bonafide marriage.

oNo need for you to appear in person. You "may" be required to do a DNA test in the US tho.

For me noone who doesn't speak and read English shouldn't be allowed USC or even to immigrate here.! Other countries are now requireing immigrants to learn their language just to immigrate!
