Nothing to panic about as long as you redid the forms and signed them with a more recent date.
There is no such think as a due date, by that I'm guessing you are referring to the 90 days prior to the expiration date on your card.

Doesn't work like that, documents have to be included with the packet.
You might need to find a new joint sponsor.

Since your are the petitioner you also need to include your own form with required documents even if you don't meed the poverty guidelines. You and the joint sponsor submit separate forms each with their supporting documents.

When he goes to the interview he will bring it with him and notify them of the change, not big deal.

You don't combine what you make and what the joint sponsor makes. If you don't make the poverty guidelines requirement than you need a joint sponsor that meets the requirements regardless of what you make.
edit: for a single joint sponsor 125% would be at least $20,575

They may or may not have the original packet at the interview if you have one coming up in the future. you can as for it then but is not guaranteed that you'll get it back. Anything can be replaced nowadays, might want to proceed that route.

No, you are not getting deported if you are a permanent resident. There is immigrants that never become US citizens and just live their lives as permanent residents.
If it has been more than 30 days and you didn't appeal the denial you can apply again with form N-400, just make sure you have all documents needed.

Whoever your husband heard the rumor from is somewhat correct, yes USCIS posted a while back that cases received after Sep 11, 2018 would be denied when required initial evidence was not submitted or the evidence of record fails to establish eligibility.
Somewhat incorrect because this only took effect a couple days ago, hasn't been the case before.
