With the F2B does this mean I will have to stay in UK or is there an interim visa I can apply for to live in USA while I wait the 6 years?

No.  You can visit if admitted on the VWP or a B visa, but there is no way to live here until you have an immigrant visa.

Not really unless you can get a work visa, do you have a university degree in a field in high demand in the US?

Also my dad got married to a US citizen before I was 18 which makes her my step-mother...Will that help the process?

Not really, because the category for over 21 child of USC (F1) actually takes a little longer at present than that for over 21 child of green card holder (the queue is longer for F1, and there is an annual quota of visas). Wait is currently around 7 years for F1 vs 6 years for F2B. (If you were still under 21 it would have made the process much faster, but that’s no help now.)

General consensus seems to be an F2B visa and then visiting your Dad on a VWP every so often to bridge the 6-7 year gap.

Keep in mind you can't work on a VWP, you can't overstay the length of the visa (90 days in one stay)  and there is always a possibility of getting turned back if they know you are applying for an immigrant visa and can't prove that you intend to return to the UK before your maximum stay duration on the VWP is up.
