My husband and I just ran into this, and I thought I'd drop a note on the forum in case no one else has mentioned it.   We applied for adjustment of status here in Los Angeles on 12-24-2019, but because COVID hit and shut everything down, we didn't have our AOS interview until January 6 of this year.  Right at the start of the interview we had an unpleasant surprise: it turned out that my husband needed to get a new medical exam, because the one he had for the K-1 visa was only good for sixteen months, and we were past that point due to the long delay in getting a green card interview.

Fortunately our interviewer wanted to get our case processed and done with just as much as we did, so she proceeded with the rest of the interview and finished all the other steps.  She kept our file pending in her office and told us to get the medical exam done and then bring the sealed envelope from the doctor to the front window at the USCIS office, and they would deliver it back to her so she could finish her processing and send out the green card.  We appreciated her help!

Your IO unfortunately didn't know the rules for K1 medicals. That's why we always recommend to take a copy of the instructions/rules to show the IO that K1 medicals done abroad DOESN'T EXPIRE as long as AOS is FILED (receipt date) up to 1 year of the date of the medical and the vaccination sheet was marked completed.
