I got my medical exam for my K1 Visa on November 2019... and I submitted my AOS on October 2020


My biometrics appointment is next week on the 19th of Jan.


When should I look forward to the medical exam?

 

Also, where can I get a rough estimate of current timelines so I know when to expect EAD card, AOS interview etc?

If all goes well you should not need to do another medical unless the IO asks for it.  As to timelines for the I485 processing times, if you know the service center processing your application, you can go here.
