Vacation before entry with K1 visa

They couldn’t make that requirement (that the POE be where you reside) because most cities don’t have an international airport and even if they do, they may not receive flights from more than a few countries.  
 

You can make anyplace POE including Puerto Rico, Guam and Hawaii if you’re in the neighborhood.

We are discussing destinations, different country vs somewhere in the US.

Does US point of entry have to be in the state where we'll reside or can it be thru any US airport?

Any. I entered in New York and reside in California. So doesnt matter.

Only thing to remember is that entering the US at any point will use the K-1, so if you want to vacation outside the US first, you can't take a route that involves a connection in the US.
