1- My spouse worked only in January 2018 and left the job the in FEB 2018. so will i put zero income for most recent Year 2018 in form i-864? or i will put my spouse income which earned in January?
 
NOTE: she didn't file taxes because she didn't make enough in 2018.

2- She wrote the letter explaining why she didn't file taxes in computer. does she need to sign the letter? or just write the name will be enough?

i think she still needs to file the returns even thought she did not earn anything.  She would have got all back in the refund.

The instructions say it may be typed or handwritten, and does not state anything about signing, so no, you don't need to have it signed, since it is just a letter of acknowledgement why taxes were not filed.

There is no requirement to file if her income was below the limit.

I should have also added, I would sign the letter if at all possible, it jsut looks better to sign anything extra you add to the packet.  If you aren't able to have it signed and delivered quickly, you can print and sign with ink, and make a good scanned photocopy to use, which looks better than nothing at all.

I didn't File taxes for the most recent Year 2018 because my income was below IRS required level.

But i worked only 26 days in 2018 and I have my w2. I put the my total income for the 2018 from my w2 is this correct?
Because on form they mentioned (My total income as reported on federal income tax return for the most recent three Years).
should i put 0 for 2018?

No, it is not correct.  The number is zero, if you didn't file a return.

If you did not file a tax return for either year, you should put 0. As for "evidence to support this" you can simply write a statement with your personal data, your total income for that year and that your income was below the filing requirement of $X,XXX for that year for your status.
