Depends on whether it is a 1040 or 1040EZ (equivalent forms changed for 2018).  Use total income from the 1040 or Adjusted gross from the EZ version.

Hi, 
I am in the process of filing i-130 & i-485 as a spouse of a US Citizen. I am going to use my H1B income in i-864 since my US citizen wife doesn't work. The i-864 instructions say: 

"If you included the income of the intending immigrant who is your spouse you must provide evidence that his/her income will continue from the current source after obtaining lawful permanent resident status." 

For such proof would a letter from my employer be enough. Something like this: Jonh Doe has been a full time employee since October 1st 2016. His current annual salary is 123,456$ and he is a senior manager?

You will need pay stubs or w2 or tax returns to prove John Does income. You also have to show that John Doe earned his income legally by copy of work permit or work visa. You will also have to show that John Doe's income will continue from the same source even after he becomes a permanent resident - basically a letter from his employer saying they will continue to employ him after he gets his green card.

Other than a cover letter which describes what forms and supporting documents are attached to the package, do you guys write any explanations as to what each document means?

We are done with assembling our package and it's basically a huge pile of paper.

Will the reviewing office be able to understand where the birth certificate, passport, tax returns and other forms. Or they just scan every document to their database you throw at them?

Hrm. I put everything in the same order that I had it in the cover letter and I had two cover letters, one for the I-130 (including information about the I-130 A) and the I-485 (since the I-485 includes the I-864, I-131, I-765 etc). I put each cover letter in front of each packet. And made sure everything on the cover letter was in the exact same order. Other than that I did not add any descriptions or anything. I described what documents were in the package and then went into list detail for  the subdocuments. And that seemed to have worked because I had no further issues and am currently being scheduled for the interview stage. I really don't know if they just scan everything you throw at them, but I feel it doesn't hurt to be precise.

My US spouse is petitioning myself but doesn't work and has no income. 
We are going to use my H1B income but to be on the safe side she also wants to include her savings account which has more than 300,000$ 
Can we print out bank statements online for the last 12 months? Would it be enough proof? 

Also she's not the sole owner of the account. Her and her grandfather are co owners

Would it be a problem?
