We still haven’t obtained a SSN for my husband and it asked on one of the forms if he had one already (which we put no). Is it okay to apply for a SSN if we already sent the AOS? Or did we have to do that before filing and now have to wait until they issue one?

Is your husband a K1 visa holder and is his I94 still valid?

Then you can still apply. I would do it as soon as possible. Usually the SSA cut off is about 14 days before the I94 expiry which expires on day 90.
