A printout of the scanned I-134 form that's duly signed by the petitioner is acceptable?

Each embassy is different. I know of a few that are requiring a wet signature. Email your embassy and ask. When you get your answer please share it with us and I will share forward to those who come behind you.

I saw that you guys went through Madrid. Do you know if the tax transcripts are mandatory? I send with P3 W2 from 2018 and 2017, a bunch of paychecks and a letter from his employer stating how long he has worked there, how any hours a week and how much he makes an hour. But I do NOT have sent the transcripts. I could bring them with me to the interview though. 

Do you know if that would be enough? I emailed the embassy but they take around 48 hours to respond so now I am obviously worried.

I had sent my tax transcripts to my fiance for the P3, in case they needed it. I think you'll be okay with everything you've sent in. Just as long as you've proven that there is financial support for your fiance when he/she comes back, you'll be fine.
