I have cancelled flights and been able to get a credit.  Some airlines charge a cancellation fee, some charge a change fee. As long as the ticket itself is worth more than either or both of those, you get a credit towards a flight generally within 1 year of thr original flight.

Right now i have a $250 Air Canada credit.  It's $150 to change flights so that gives me $100 toward a new ticket in a year.  Better than a kick in the pants with a steel toed boot!

I have done this before and it was almost not even worth the effort at all. I paid $600 for a roundtrip ticket that I had to end up cancelling. I had to pay a $200 rebooking fee, and a $200 cancellation fee, which left me $200 to use.

Depends on the airline obvs.
