My fiance is in China.  She received the paperwork to schedule an interview.  All good so far.  The embassy also sent what looks to be my original K-129f paperwork.  She discovered an error.  The English is all correct, but there is her name in Chinese characters and they do not match her passport.  My error, somehow I messed up.  Should we contact the embassy to correct?  Or are we opening a can of worms?  The other option is to re-print this page with the corrected Chinese. There is an approved stamp on page 1, but this is on page 5 I believe and there is not approval stamp, so replacing this page would be easy.  Any opinions?

I don't think it is wise to change any documents that you have  received.  You can contact the embassy or wait on the interview where they will correct the information. Just make sure you have the correct spelling on the ds160. People make mistakes all the time when filling out paperwork.
