My Fiancee's interview for her K1 Visa is in September. I'll be sending her my documents near the end of August. My question is do I need to include my birth certificate or will my certificate of naturalization be okay?

The sponsors birth certificate/natualization info is not needed at the K1 interview.  That documentation was submitted with the I-129f.  The interview process is for the beneficiary and their documentation.

I recently heard the exact opposite, but it might be consulate specific. Copy of birth certificate (and anything else that was submitted with the I-129) is highly recommended.

Not sure though if it's just people being "better safe than sorry" though. Hard to tell on this forum sometimes what a person genuinely needs to bring. Stuff like that is often not listed on the interview checklists.

However, you don't need to submit your original certificate either way. Just send (or email) a copy so they have it to pad the file.
