OP, obtain a state ID or drivers license for your spouse. I believe it lessens the chance of any issue.  Bring I-485 NOA1, passport, marriage license just in case to show LPR is in the works.  You should be fine.  

Never heard or seen such and I've always travelled severally with just my passport and nothing else while my AOS was pending. 

But I guess it does happen, since you claim to have seen it take place

Timeline

I remember being in line to board the plane at the gate and uniformed agents pulled a few out of line, took them aside and asked them questions and looked through their bags.  I was surpised at the time too because we had all went through security.  They did eventually then board the plane.

Keep a copy of your NOA1 for your AOS handy, this is your evidence that she has legal authorized extended stay pending AOS, otherwise enjoy your trip.
