I have just sent off our petition (I-130) two weeks ago to the London office and was wondering on average how long it takes to get the notice of receipt.

I also want to make sure I get everything ready ASAP so if anyone can help me with what type of supporting documents I need for the second half that would be great. I have been living in England with my husband for a year now and am dying to go home and make this go smoothly!

You'll usually get a receipt within a couple of weeks, then you can check the "currently being processed" date on the London embassy website to see when your petition is likely to be processed. https://uk.usembassy.gov/embassy-consulates/government-agencies/dhs/uscis/i130filing-html/

In terms of documents for the second stage - you'll need the I-864 and the document that go with that, of course. London doesn't tend to want to see much relationship evidence, if any, but they may be more interested since you're originally from outside of the UK. Take a look at the link in my signature for everything I know when I did the process, and read the embassies document list here: https://uk.usembassy.gov/visas/family-immigration/required-documents/
