You need the original I-864, as it needs an original signature. The rest can be copies.

The co-sponsor needs the same things as the main sponsor: I-864, 3 years tax filings, proof of income, and proof of US citizenship or greencard.

No, as people without US citizenship can have a SSN. Proof would be something like a passport or birth certificate.

The household size would be the friend, friend's spouse (if married), all of the friend's minor children, anyone else claimed as a dependent on the friend's most recent tax return, and the beneficiary (you?).

All minor children regardless of where they live are included in the household count. That is how the instructions for the affidavit of support reads.
