US citizen living in Ireland, using joint sponsor for i-864

My wife and I live in Ireland and I work over here as well but from what I'm reading my income will not count toward anything when it comes to the I-864. My mother is more than willing to be a joint sponsor. My question is, should I fill out a sponsor form at all? I am the petitioner on the I-130 (obviously, I'm her wife). If so, do I fill out an I-864 and does my mother fill out the same form? I'm assuming my stepfather should fill out the I-864a since we will be living with them. Thanks in advance for any help.

Timeline

I will be working in the states but I don't have a job offer lined up as of yet. I can't really go looking until I know when we'll be headed back. Catch 22 kind of a thing.
