I live in Texas.

I don't have any issue adding her on the title I own, but at the same time I don't want to spend time on it if it's going to take few weeks to a month. I want to submit all needed documentations ASAP.

The problem is the proof of it. In many states, modified or new titles can take months to arrive.

I'm not sure if they'd be able to give some sort of temporary proof or proof of application?

I'm a collector car dealer. I do title work all the time

They should be able to walk in together if they have an original title and have the title bureau change it to include both their names. Different states do have different rules but it is simple enough to go and make the inquiry.

Yes, but could you walk out with a new title with both names? Not in the states I've titled cars in. I don't know about OP's state.

Yes. Quite easily. I just did it on our personal car as well. As long as it is owned outright and there are no liens etc. It is like you are transferring ownership to the two of you rather than just one person. It definitely varies by state. But if OP is desperate for paperwork this one can be helpful.

In Arizona, in and out in 15 minutes. Not even need to go to DMV, title services print your brand new title in minutes.

Texas is easy too, walking a tax collector with ID and fill out 130-U form and a small fee. New title comes in 10 days. He just doesn't want to find out or doesn't want to at all.

Adding names to things now, after the fact, is not that helpful for the RFE anyway. They don't want you to go out and create new documents to send them just because of the RFE. They want proof from the last 2 years of the marriage.

The problem was that evidence spanning the entire marriage was not sent. Send evidence of whatever joint accounts you have had for the length of your marriage. It does not matter if they are currently closed. Show that they existed and were joint by sending statements. Include statements that span the entire the length of your marriage, even if from various accounts.

Show that you resided together by providing mail that was addressed to both of you(ideally) or mails sent to your separate names at the same address.

If you have joint health and car insurance, then show documentation from those that both names are included going back the entire time you have had those shared accounts. The same goes for any other type of shared accounts you have. The longer the accounts go back through your marriage, the better. Copies of IDs with the same address can be added as well.

The joint taxes are a biggie, but you already decided to send those. You can print them out online instantly or walk into your local IR office and get them the same day. 2014 may not be available yet though, but you can send a complete copy of your joint return, if you filed it already.
