Is it okay to book a roundtrip ticket since it's cheaper? Will they ask at the port of entry why there is a return date when he's supposed to stay in the US until all the AOS and everything is done?? What is he supposed to answer to that?

Yes, it is ok to buy a round-trip ticket. Be sure to cancel the return portion of the ticket, because otherwise you could have a problem when filing for AOS. It might look like your fiance left the country (due to the return ticket and the electronic I-94).

It is doubtful the immigration officer will ask about your fiance's departure date. The IO is more likely to remind your fiance you have 90 days to marry. if, for whatever reason, the IO does ask about a return date, your fiance should just be honest: it was a cheaper to buy a return ticket.
