In terms of proving status in order to start a new job, here is the information from the I-9 guide to Employers:

Employees who attest to being a lawful permanent resident in Section 1 of Form I-9 may choose to present a valid Form I-551, Permanent Resident Card, for Section 2 (or Section 3, if applicable) . A lawful permanent resident is not required to do so, however, and instead may choose to present a List B and List C document combination, e .g ., state-issued driver’s license and unrestricted Social Security card.

Unfortunately he doesn't have his DL yet and we're now realizing we need to make sure to go to the SS office and get the restriction taken off before we send the 10yr card back in. Thanks!

This also happened to us. I called a couple of times and they told me everything was fine. Of course I was worried about it, so at the correct time I submitted the paperwork to remove conditions. The application for removal of conditions and my payment was returned along with a letter explaining that we did not need to remove conditions. I saved those documents in case there would be a problem when applying for citizenship but there were no problems.

Oh wow! Congrats on your naturalization. They've just messed so many things up for us I'm afraid to not fix it early on. I don't want to have any issues when it comes time for my husband to become a citizen. We plan on calling them Monday and seeing what they say, but I tend to trust the senior members of VJ more than the wonderful government workers that keep messing up our case. I'm really glad everything worked out so well for you!
