My choice joint sponsor just informed me that he and his wife filed taxes seperately (married filing separately). How do we proceed using him as a joint sponsor? Him and his income/tax transcript alone or does his wife and her income also have to be included?

His income alone.

Also do we still count the wife and child in household size? Im so confused! !!

If he counts them as dependent a then yes.

No they filed separate

Ok I just saw the other answer. So they filed separate returns. He claimed no dependants so his income stands alone? As in household size will be him and the beneficiary?

The wife and child will be part of his household count. If the child is a minor, it does not matter where the child lives or who claimed them on their taxes. A spouse and minor child are always counted. If his income alone is enough to meet the requirement for his household size plus the foreign fiance(e), then he can be the co-sponsor. It makes no difference that they filed separately.
