US Citizen who just got married to someone with a J1. Doing the whole AOS thing

I do not have enough income so my uncle and/or aunt are willing joint sponsoring us.

I-864 as the main petitioner - Check

Uncle and Aunt file taxes jointly with my uncle being the "taxpayer" on the 1040. Even though they file jointly their wages still appear seperately on the 1040. Her income is lower.

Can my aunt be a single joint sponsor?

I already know I have the option of both of them sponsoring me and filling out the 864 and the 864A but I just prefer only my aunt for simplicity.

If her income alone is enough for her own household size plus the intending immigrant, then she can do it without her husband filing an I-864A. Have her send in a copy of her complete tax return with all forms, schedules, W-2s and or 1099s. That will prove her individual income from the joint taxes. She will also send in a letter from her employer and/or most recent pay stubs to prove her individual current annual income.
