Well, the reason I ask is all of her other information prior to now has her maiden name so I didn't want any complications.

Married name is the usual but is she wants to keep using her maiden name she can do it, only that she will have to pay if she ever wants to change it and get her GC name changed to married name.

What do you mean by she has her other information in her maiden name? Her passport? If that's the case, she still can travel using her passport under her maiden name, the only thing is that if she needs to travel abroad before the GC is approved, she has to use the Advance Parole (form i-131) and she will need to bring with her the marriage certificate so airport staff can match her maiden name to her new married name in EAD-AP and/or in GC.

Totally normal to have all other documents in her maiden name. Changing name on her paperwork takes time, and it's the same for everybody.

Again, if she wants to take your last name, she should start using her new married name everywhere... And it starts with the AOS paperwork.
