My fiance put on the box that we met on February 2007, when he actually was in my country on January 2007... and we were still approved. I believe the application only has to prove you have met within two years, and for the visa approval is just the evidence you present at the Embassy stage. Although they asked me at the USEM why it says Feb instead of Jan, and I told the lady, well my man is REALLY bad with dates, he even can't remember his mom's birthday, I have to! And she laughed and went to the next question...

Best wishes!
