so i went through the i-129f process; married my fiance and now we're processing AOS papers... first, i want to make sure of my current understanding:

for AOS, i'm using the i-485:

-in the i-485, it states i'm doing the g325a. this appears to almost be a 2nd time? (first time when doing i-129f) did i read that right?

-and now i'm also doing the i-864 (AOS). it states that it wants a signed letter from my employer listing my job title, start date, my salary, and the status (full-time) of my position. i did this exact type of letter when doing the original i-864 for my wife's packet prior to our marriage when she got her packet. the letter was issued by my employer in may (4/5 months ago). do you think i could still use this letter? or should i harass my HR dept. at work again for a new one?

Everything must be new and current date. You are filing an entirely different application that has nothing to do with the I-129F papers that you sent in. The only piece they link up is the medical previously had in the other country for immigration. New passport photos, new forms new proof of relationship/marriage etc. Follow the AOS guide and post in the AOS section.

Your I-129f was approved in 5 days from your NOA1 date.

Your interview took 67 days from your I-129F NOA1 date.

AOS was approved in 2 months and 8 days without interview.

ROC was approved in 3 months and 2 days without interview.

YOU are not using the I-485, your wife is. YOU are not doing the G-325A, your wife is. This is her application, not yours.

You complete the I-864 as her sponsor and include financial evidence. Yes you will need a new employer letter because a lot can change in 5 months, including you no longer having that job. Using the same tax transcripts/returns would be fine, as long as you include the most recent tax year of course.

The G-325A has different info on it now. She has changed address, her last name could have changed, her marital status has changed.
