I am getting ready to send all the documents my fiancé needs for his interview at the consulate in Rio de Janeiro but am wondering if it is suggested that I remove the SSN from the tax transcripts, such as marking it out with a black pen so it's not visible.

Your SSN will prove to them that this is you naynay, so you shouldnt erase it. Besides I assume you trust your fiance to not abuse it, right?
