Since I am living with my fiance in Honduras and using a joint sponsor, should I write down my job I have in Honduras for my employment? Or should I just put unemployed, since I won't have that job once we move to the US?

It really shouldn't matter, but the I-134 is nothing but a present tense document. A snapshot. Here today, gone tomorrow. There is no guarantee anyone will have the same job at the time of AOS, or entry of the foreign fiancee, or the next day for that matter. If you have a co-sponsor, that worry is handled. If you are legally employed in Honduras, then go ahead and answer truthfully.
