Here's our experience at the Embassy / Consulate Stage:
1. Biometrics.
11/21/2014
I chose to do biometrics in Guadalajara (my hometown) as that would decrease the amount of days that I'd have to spend in Juarez, it was fairly quick. They only have 1 time slot per date at the Guadalajara consulate for Immigrant visa Biometrics and I forgot to bring the DS 260 confirmation. (Dummy!). So they canceled my appointment for that day and i was rescheduled to come back the day after that.
Next day it was fairly simple, I went in, guard checked my stuff, sat down, got biometrics checked and got a sticker on my DS-260 and I was asked which address I would live in the states.
2. Medical
So I scheduled an appointment for my medical with "medicos de visas" for the 23rd of December. I arrived the day before in Juarez and I spent the night at hotel IBIS. Horrible experience! Hotel was sooo disgusting that I won't even go into detail...
I had my appointment at 8 am, and I called medicos de visas to pick me up (since they have a shuttle service) I checked google maps and it would take me 10 min to walk the 800m stretch between hotel ibis and the hospital but since I wasn't feeling very confident in just walking around Juarez, I was really happy with the fact that they have a shuttle service.
So... at the medical they checked for blood pressure, temperature, they drew blood and asked me if I had any tattoos (which I don't) they stripped me down naked and the doctor checked my genitals for any STDs...(which I found completely invasive but heck... it's a doctor...) if I drink and how often, if I smoke cigarrettes and how often. and if I had ever used ilegal drugs. (I mentioned that I onced gave a couple of puffs to a mariguana cigarrette when I was in college and never tried it again). So... apparently because I admitted to drug use in the past(even if it was just once) and drinking alcohol... They sent me to a pyschological review. The Psychologist asked me about the mariguana use (which I already had mentioned that it had been one time and Found it utterly disgusting), She asked me about mental issues, I mentioned that I had had depression when I was younger and I was properly treated, she asked me about medication for depression and I told which medication the doctor prescribed then. Then She kept proding about my drinking and I'm like... I barely drink... I might have a sip or two here and then... which I really do... I am not big on alcohol, even less other stuff... anyway... so she wrote a whole report... and then she told me... I will not send any recommendations to the consulate, everything seems to be in order..
they made me pee in a cup, and I was on my way out after spending almost 500 dlls. went to the hotel, picked up my stuff and off I went to the airport back to my home town to spend xmas with the family.
3. Interview
So we arrived on december 28 to Juarez and now we stayed at city junior, much better hotel compared to ibis, things are clean and it's in fact easier to get to the consulate from here. it's literally across the street.
So i was totally freaking about after the very stressful experience at the doctor's... so I was prepared for the worst. I went in, passed security checks and then I was sent over to the main building (no waiting area needed as apparently there weren't many people attending interviews). After about 2 hours of wait, I was asked to go to 1 window where this man asked for my paperwork, apparently they had everything and NVC sent all the paperwork correctly because I didn't need to give them anything at all.
No payment was needed and I got a green mark on my appointment numbersticker type of thing (that number they give you when you pass security) which means that everything is in order and you can start interviewing right away.
So I was sent over to a window where this man asked me several questions (by this time i was totally freaking out about the medicals being an issue) He asked me if I had entered several times with my tourist visa, I said yes. and he asked me for it. then he went over to the back and he canceled my tourist visa.
He asked me when did I meet my husband, where, what does he do for a living and what do I do for a living, then he stared at my medicals for sooo long I was totally going bonkers, but he never said anything!
Then he closed the folder and went back to the computer, typed some stuff and looked at the green papers (which are the ones you want to get...) so then he went to the back again and i thought OMG he's going for the blue slip, the waiver one... and Iw as like no no... you looked at the green ones! and then he came back with a bunch of white papers and I was like... at least that's not blue... I wonder what it is... and it was a brochure about domestic violence... hehehe
and he said... well.. here you are your visa was approved. in this green slip you can find instructions on how to track your passport and visa!!!!!!!!!!
I was about to cry but I just said to myself, just wait wait until you're out of there... I went outside and there was my hubby all concerned looking, I raised my thumb and we smiled, gave me a big hug and that was it! 
I'm Glad to share this with everyone that reads it. reading other people's reviews was very helpful in figuring out what to expect.
