In short, my experience was great and the staff was very nice and efficient.

My interview time was at 8:30 am on a Friday morning and I got to the entrance of the HK Consulate around 8:15am. The security guard checked my interview letter at the gate and let me in even though I was a bit early. After going through a simple security check, the guards led me to the US citizens line instead of the non-immigrant visa line, which was SIGNIFICANTLY shorter. I was very glad I didn't have to wait in that long line.

After going through more security checks and leaving my electronics in the locker they provided, I headed up to the 1st floor since that is where the immigration unit was located. I'm guessing 8:30am was the earliest interview slot because the windows were open yet when I got there so I waited a bit until one of the staffs called my name and waved my over to the counter.

First, the staff who called me over was a Chinese speaking lady who asked for my documents (eg Copy of HKID, birth cert, medical check report etc.) She was very sincere and patient, and went through the visa pick up process with me after she has collected all the documents. She also handed me a leaflet regarding "Domestic Violence in the USA" and told me to read it because the ambassador might ask questions about it to make sure I know my rights and options if I ever encountered such unfortunate event in the US.

After another 15 mins wait, another Caucasian lady called me over to the counter. She asked some personal questions about me and my fiance, mostly about how we met and how he proposed to me, whether he has been to Hong Kong or not. She also asked if I read the Domestic Violence information sheet and if I knew to call 911 in case of an emergency. Other than that, she did not asked too many question. She then proceed to took my fingerprints and collected my passport and said "the new visa will be readied in a few days". YAY

(Then on the same Friday, I got a text from US Travel Docs saying that my passport was ready to be picked up at the local carrier service (SF Express), which means it took about 4 working days to have the passport ready :D)

I rarely write reviews, but Hong Kong consulate has a sad amount of reviews....
Just make you have all the documents listed on the checklist with you then you should be all good :D
Hope my experience helped those who are feeling anxious about their interviews :D
